Great Dried Chipotle Chillies!
I got these for making my chipotle pinto beans.2oz if the chilies ground to a fine powder with 1.25lbs beans, 500gm each of red onion and Roma tomatoes, tbsp pepper, 3tbs Mexican oregano and 50g finely diced garlic (or grind 50g garlic with some water till it’s purĂ©ed and dump it in the pot)Pressure cook in a 6.5L pressure cooker topped off to 2/3 full with ingredients plus water for an hour. Then leave on the heat and reduce down till it is just about the consistency of slightly watery refried beans.That last part you pretty much gotta stir constantly so it won’t burn to the bottom. I use an InstaPot.I like to dump 1/4 cup shredded cheese in 1 cup of the beans and top with freshly cut onion and tomato, 1 diced Serrano (for extra heat), 1 or 2 diced cloves of garlic, and top off with some Guac.MmmSo yeah. They do the job well. đź¤
