Is it gluten free?

No, it's not gluten free. However, this wheat is not your normal, hybridized wheat consisting of 42 chromosomes per grain. It is reminiscent of the ancient wheat of biblical times, 16 chromosomes per grain. I don't think it's exactly the same as wheat from 2000 years ago because everything living mutates according to nature, but this flour is supposedly ground from wheat that is very close to the ancient wheat. I've baked with it, and it's consistency is wonderful, and reminds me of the wheat I had when grandma used to bake. My husband and I are both wheat sensitive, he more than I, and he can tolerate it quite well. We even use the Einkorn wheat pasta, and we have no problem with digestion. However, if you are a celiac sufferer, I would avoid it just to be sure. I would recommend reading "Wheat Belly" by Dr. William Davis. Just a note.

how long can the flour be stored? where and how is the best place to store it?

I always put my flour into the freezer to keep it longer. I've had flour in the freezer for almost a year and it was still good to go and I'm still alive so there you go. Commercial flour usually lasts 6-8 months so if your Einkorn is sitting outside the freezer or fridge I'd give it no more than 6 months.

This question is for nikki hipps - can you tell me why you freeze your grains before using them?  is it to kill possible parasites?

Here's what some say about it online:  Why Whole-Grain Flours Should Go in the FreezerFreezing your whole grain flours greatly slows down how quickly these flours spoil, and protects them from pest infestation. You are effectively hitting the pause button on your flour. You can also store your flours in the fridge if you don't have room in your freezer - that's more like hitting the slo-mo button. In either case, store the flour in an airtight container, like a Mason jar or a big zip-top freezer bag.Even if you cycle through your flour stash pretty quickly, I still think it's a good habit to store whole-grain flours in the freezer. You don't know how long those flours have been sitting in their bins at the store.

I would love to be able to make pasta with this wheat - for my son who is gluten intolerant - has anyone tried to make pasta.  Thanks!

Einkorn whole wheat flour makes the best tasting pasta you will ever make and eat.  We make it often and cook what we want to eat after it’s made and store the remaining dried pista in air tight container and eat within the next 4 weeks. I am gluten intolerant and have ZERO problem with this flour!!
